The bold, malty backbone of our Crimson Dawn. Grown at low elevation in the flood plains of the Brahmaputra, Assam leaf is full-bodied with a natural briskness that holds milk beautifully.

The Process

Estate Selection
We visit our partner estates personally — not every season, but enough to understand the land. Each estate is chosen for consistency of character, ethical farming practices, and altitude. We do not buy from commodity brokers. Every leaf has a name and an address.

Tasting & Curation
Before any blend is approved, our founder tastes each lot at three different temperatures: hot, warm, and cooled. Chai changes dramatically as it cools — a blend that dazzles at 80°C must still be interesting at room temperature. Most lots are rejected. The few that pass become Ethereal.

Small-Batch Blending
Each blend is assembled in batches of no more than 5kg at a time. Spices are hand-crushed on the day of blending to preserve volatile aromatics. The tea is layered, not mixed — ensuring even distribution without bruising the leaf. No machines. No shortcuts.

Nitrogen Flushing & Sealing
Every tin is nitrogen-flushed before sealing to remove oxygen — the primary enemy of freshness. This extends the aromatic life of the blend without preservatives. What arrives with you is as close as possible to the moment it left our blending room in Melbourne.

How to Brew

Chai rewards patience. Follow these steps and your cup will repay you with complexity, warmth, and depth.

Measure
Use 1 heaped teaspoon (3g) per 200ml. More leaf means more body — adjust to your taste over time.
Golden ratio: 1 tsp per cup

Water Temp
Black chai blends: 95°C. Delicate blends like Emerald Ascent and Indigo Mist: 80–85°C. Never boiling — it scalds the leaf.
Off the boil, 30 sec rest

Steep Time
3–4 minutes for bold blends. 2–3 minutes for delicate reserve blends. Remove the leaf promptly — steeping too long introduces bitterness.

Serve
Taste before adding milk or sweetener. Our blends are crafted to stand alone beautifully. If you add milk, warm it first — cold milk closes the aromatics.

Every estate we work with pays its workers above the regional living wage. We visit our suppliers, we know the farmers' names, we understand the land they tend. This is not a marketing claim — it is the minimum standard we hold ourselves to.

We are working toward full supply chain transparency — by 2026, every tin will carry a QR code linking to the estate, harvest date, and farmer profile of its primary ingredient.
